This is so simple I can hardly call it a recipe, but these kale crisps are both flavoursome and satisfying and they make you feel virtuous too. The trick is to cook the kale at a very low heat to dry out the delicate leaves without burning them, ensuring crispness without bitterness.

Ingredients

  • 300 g whole leaf kale
  • 4 tbsp olive oil

Method

Preheat the oven to 140°C/120°C fan. Strip the kale leaves from the stalks, then discard the stalks and tear the leaves into roughly 3–4cm pieces. (You should end up with about 200g.)
