Put the flour, Parmesan, Cheddar, sesame seeds, poppy seeds, olive oil and salt in a bowl with 75ml water. Stir to make a rough dough that just comes together, then tip onto a flour-dusted surface and knead until you have a smooth dough, about 5 minutes. Return to the bowl and cover with a clean tea towel, then leave the dough to rest for 30 minutes.
