I like to add some spices to the base, such as aniseed or ground cumin. If you are adding these, then put them in with the flour.
Place the sugar and lukewarm water in a large bowl and stir. Sprinkle the yeast on top and leave for 5-10 minutes until it is foamy. Add the olive oil and salt, then the flour and cumin and mix together to form a dough.
Take the dough from the bowl and knead on a lightly floured work surface for 10 minutes.
