This recipe does exactly what it says on the tin – it’s messy but completely delicious.


  • 400 g rhubarb, trimmed and cut into 4cm lengths
  • 2 pieces of stem ginger in syrup, finely chopped
  • 2-3


Preheat the oven to 190°C/375°F/Gas Mark 5.

Place the rhubarb, ginger, orange juice and 50g of the sugar in an ovenproof dish and bake in the oven for 25 minutes
