Here is the recipe for a Cherokee Blueberry Honey Cake (sounds like the name of a pop star’s progeny). It is beautifully moist and not too sweet. The original recipe used huckleberries*, but those being thin on the ground in north-west London, I replaced them with blueberries. I was told by a guest that huckleberries aren’t actually very nice!
I made this in a 2kg bundt tin, but you can also halve the recipe and make it in a 1kg loaf tin.
