In many neighborhood restaurants in Taiwan, a large open pot of soup is free for the taking, at all hours of the day. The soups are simple, clear, hot stocks. Large chunks of squash or slivers of tofu sheets might be added, but basically they’re just good hot soups to enjoy with your meal.
Vegetarian broths are common in Taiwan and in mainland China, enjoyed not as a substitute for meat broths, but for their own distinctive flavor.
