Roasted rice powder, called khao kua in Thai and thinh in Vietnamese, is used in both cuisines almost as a seasoning salt. It is sprinkled on top of or mixed into a dish, adding an easy nutty flavor. In Thai food, you will find it always used in laap (Savory Chicken Finely Chopped) and sometimes in Grilled Beef Salad.
