Shrimp and pork seem like an unlikely combination, but it is common in China, Thailand, and Vietnam. We wonder if its origin might have something to do with rice paddies, because of the tiny freshwater shrimp that sometimes live in the flooded paddies. This salad, though it uses saltwater shrimp, might support that idea, for in Thailand it is often made with aquatic leafy greens and herbs that grow on the edge of riverways and rice paddies.
