The distinctive aromatic taste of shiitakes in this vegetarian broth makes it a good choice for winter dishes or for combining with other strong-tasting ingredients. Like classic dashi, it makes a rich-tasting base for miso soup. If you prefer a lighter flavor, use three mushrooms; if you want more intensity, use five. The broth is a clear brown tea color.
