Tempura needs a forceful dipping sauce. The easiest option is to use Mariko’s Must-Have Concentrated Stock if you have it in the refrigerator already, possibly very slightly diluted with water. Otherwise, you can quickly assemble a tasty dipping sauce from basic ingredients. Remember when you taste it that the sauce is meant to be strong, almost overpowering, to match the tempura.
