Rosematta, a parboiled red rice from South India, has slightly fat, long grains with some flecks of the reddish outer layers (bran) still on, like a semi-milled rice. When it is raw, even the “white” part of the rice is yellowish because of parboiling. The overall look of the raw rice is pinkish bronze to amber.
