Italian rice can not only be eaten in place of pasta, it can be cooked and dressed very like pasta. This simple plain rice is best made with a good-tasting superfino grade of Italian rice. As with pasta, you must carefully monitor the boiling rice to make sure that it doesn’t overcook. Remember that it will go on cooking a little even after it has been drained, so allow for that when judging whether it is done.
