Dokuz Turlu Patlican Taratoru

Method

Dokuz turlu patlican taratoru, or nine-ingredient eggplant salad, is a most interesting and delicious variation on the basic eggplant salad. Prepare the eggplant as directed, then fold the following into the basic threesome of eggplant, oil, and lemon: 2 green bell peppers, roasted, seeded, and chopped; ½ cup ground or finely chopped walnuts;

¼ pound farmer or feta cheese, crumbled; ½ cup plain yogurt, drained in a sieve for 4 hours; 4 or 5 cloves garlic, green sprouts removed and mashed or minced; and 1 fresh hot chile, seeded and finely minced (optional). Season well with salt.
