• 3 kg (6 lb 12 oz) peeled beetroot (beets), cubed

Place the beetroot in a thermomix and blend on high speed until puréed. Strain the pulp through a fine sieve lined with a triple layer of muslin (cheesecloth) and squeeze out as much of the juice as possible to make about 2 litres (
