Fillet the whiting and remove the skins and pin bones. Lay a sheet of plastic wrap on the bench top and then lay 2 fillets from the same fish head to tail and shape together. Roll in the plastic wrap and leave to set together. Repeat with the remaining fillets. Refrigerate for 2 hours.
