To make the Lemon Leaf Syrup


To make the Lemon Leaf Syrup

Place the syrup in a medium saucepan over medium heat and bring to 80°C (175°F). Pour the syrup over the lemon leaves and cover with a lid. Leave the leaves to cool at room temperature for 4–5 hours and then refrigerate for 2 days to infuse. Strain the lemon leaf syrup and refrigerate until required.
