  • 2 limes, zest finely grated using a microplane
  • 100 g ( oz) freshly squeezed lime juice<


Mix the lime zest, lime juice, ginger and sugar syrup together in a bowl and leave to marinate for 24 hours. Strain the mixture through a chinois and squeeze the ginger and lime to extract all the juice.
