  • 300 g (7 oz) caster (superfine) sugar


Heat 300 ml (10½ fl oz) of water and the sugar in a clean medium saucepan over medium–high heat. Stir well until the sugar is completely dissolved. Bring to a simmer and then remove from the heat. Le
