  • 3.15 kg (7 lb 1 oz) caster (superfine) sugar

Method

Heat 2.1 litres (71 fl oz) of water and the sugar in a clean medium saucepan over medium–high heat. Stir well until the sugar is completely dissolved. Bring to a simmer and then remove from the heat.
