This is a classic hotel ‘beer on the balcony’ treat. I like to judge a hotel’s kitchen by their devilled cashews.

Ingredients

  • 100 ml ( fl oz) vegetable oil
  • 300 g (10½

Method

Heat the oil in a heavy-based frying pan just until a light smoke haze becomes visible. Add the cashews and stir for 3 minutes or until golden. Add the curry leaves and cook for another 30 seconds.

Pour the cashews and curry leaves into a sieve placed over a heat-proof bowl to drain the oil, then drain on paper towels. Place in a bowl with the chilli powder and salt and
