This dish, a kind of very thin pancake, is wonderful for breakfast with some sambal or leftover curry from the night before. It is traditionally made using a flat pan called a tava, which are available from Indian grocers, but you can use a non-stick frying pan.

You will need to start this recipe the day before you intend to serve it.
