Vadai and bondas are great snack foods that are sold in the roadside boutiques piping hot with tea cappuccino.

Vadai is also known as Point Pedro Vadai—Point Pedro is the northernmost tip of Sri Lanka. To give them a seafood cracker flavour, you can push a whole small peeled green prawn into each of the balls before shaping them into discs.

You will need to start this recipe the night before you plan to eat the vadai.
