Method

Put the unpeeled potatoes in a saucepan of cold salted water, bring to the boil and simmer until the potatoes are tender. Drain. When cool enough to handle, peel the potatoes and mash them coarsely.

Heat 2 tablespoons of the oil in a heavy-based saucepan over medium heat, ad
