This dish is loved by all in Sri Lanka and is considered to be one of the most sumptuous dishes in our cuisine. The best Buriani I have ever had was in the Muslim area of Rangoon in Myanmar.

Ingredients

  • 1 size 16 (1.6 kg/3 lb 8 oz) chicken</

Method

For the buriani spice mix, place all the ingredients in a heavy-based frying pan and dry roast over low heat for 7–10 minutes or until fragrant. Cool, then using a spice grinder or mortar and pestle, grind the mixture until a fine powder forms.
