  • 80 ml ( fl oz/ cup) vegetable oil

Method

Heat the oil in a large heavy-based frying pan, add the onion, garlic, ginger, curry leaves, leeks and carrots. Season to taste and cook over medium heat for 6–8 minutes or until the onions are soft.

Add the rotti strips and meat and stir for 2–3 minutes or until heated through. Add the beaten egg and stir for another minute or until just set. Serve hot with the reheate
