In the late eighteenth century, a community known as the Hakkas, originally from South China, migrated to Kolkata. In Cantonese, the word hakka means ‘guest people’. Using the ingredients available to them, these settlers began to create their own unique style of Chinese food which over the centuries has morphed into an array of popular dishes throughout India and beyond. Hakka noodles, the Indo-Chinese version of chow mein, is one of most loved.
