The vegetarian version of ‘Country Captain’ evolved after the chicken version and doesn’t use any whole spices, instead using a ground spice blend. My Madras curry powder works really well here. Once the prep is done, the dish itself takes no time to cook.

Ingredients

  • 250 g potatoes, diced
  • 250 g carrots, diced
  • 250 g

Method

  1. Bring a pan of water to the boil and then add the potatoes and carrots, as they take a little longer to soften.
  2. After 6 minutes, add the peas and beans. Simmer for a further 6 to 8 minutes or until the vegetables have softened. Check they are all tender before draining and setting aside.
  3. While the vegetables are boiling, if using tamarind pulp, place
