Allegra’s Kachumber Salad

Kachumber salad is the most ubiquitous salad in the whole of India and balances out many curries with some crunch, a little heat and clean flavours. It’s quick to rustle up and works so well with many of the curries in this book, which is why I’ve included it here. There is a version of kachumber salad in my first cookbook, Chilli & Mint: Indian Home Cooking from a British Kitchen, but this one has been adapted by my daughter Allegra
