A favourite of the British in colonial India was a dish affectionately known as ‘pish pash’. It is thought that the name derives from the Persian ‘push-pash’ which means ‘bits and bobs’ and fittingly describes the dish’s medley of textures. This one-pot meal comprised meat (often chicken) and rice with a few whole spices thrown in, plus onion, garlic and ginger and occasionally potatoes too. The British loved nursery-style comfort food and this dish ticked all those boxes. It would have bee
