A much-loved Goan dish that was introduced by the Portuguese via Africa. Caffraria was the name given to the territories along the southeast coast of Africa, colonised by the Portuguese and the British. The Portuguese ruled over Mozambique, and it is likely that the dish migrated to Goa from this region. It is a semi-dry recipe that would work as well on the barbecue as it does in the pan.
