The Portuguese introduced bread leavened with yeast to India. Goan pao, or pav as they are also referred to, are simply leavened bread rolls: soft, fluffy and perfect for scooping up a curry, dipping into hot soup or dal. They’re fun to make and require very few ingredients, although the proving does take time so plan in advance when you want to give these a try. The results are always very pleasing. In Goa, fresh batches are made each day for breakfast.
