In the local Goan language of Konkani, these fritters are known as filos. They are very similar to a British drop scone and the perfect teatime treat, as well as a helpful recipe for using up overripe bananas! I like to add a sprinkling of cinnamon to mine, but that is optional.

Ingredients

  • 2 medium or large bananas, ideally overripe
  • 1–2 tsp jaggery, light brown sugar or icing sugar, to taste

Method

  1. In a mixing bowl, use a fork to break up the bananas and mash them to a smooth paste.
  2. Add the jaggery or sugar, vanilla essence, cinnamon and egg. Mix well.
  3. Sift the flour into the bowl and stir until everything is combined.
  4. Add the milk and mix to a smooth pancake batter. If you find it is still a little thick at this stage, simply add a da
