This is an absolute favourite of the Himalayan people. Versions of the dish stretch from the Kashmir Valley to Nepal, with many variations along the way. Traditionally it contains no tomato, onion, garlic or ginger, and yet the Punjabi version includes all of the above. My recipe stays closer to the traditional, more paired back style, although I have added garlic. It is very quick to cook once the potatoes have been boiled.
