This well-known lamb curry literally translates as apricots (jardaloo), potato straws (salli), lamb (boti) and is always prepared as part of a Parsi wedding feast. It’s a delight for the senses and a nod to the Parsi ancestry in Persia with the delicate sweetness of apricots, which are puréed.
