In the old Irani cafés in Mumbai, there is one particular cake that oozes with nostalgia: mawa cake. Mawa, also known as khoya, are milk solids found in several Indian desserts, such as barfi and besan ladoo. They can be made at home, although it does take time to evaporate full-fat milk until only the milk solids remain, requiring a lot of stirring and patience.
