These delicately spiced green vegetable patties are deliciously moreish. The kebab itself is of Arabic origin and was used to describe roasted meats. They were first introduced to India during the Mughal rule and are now widely eaten across the world. I first came across these crispy patties not in India but in the hugely popular Indian snack shop in Tooting known as Pooja.
