We did this dish for a New year’s eve menu. It has all the elements of a croque madame, egg, cheese, bacon, toast, so we called it that for fun. You could do it in a little ramek in rather than the fiddly shell
Dissolve the yeast in the water with the sugar. Put the flour and salt in the bowl of a mixer, and using the paddle attachment beat in the yeast mixture, followed by the eggs. Once a smooth batter consistency is achieved, start adding the butter one piece at a time until it’s all incorporated.
