Salt Beef takes me back to when I worked in the Butcher’s, and eating Bagels as a kid the East end. When I was in New York I tasted the real thing. This dish is my take on the classic Reuben Sandwich
Rub the spice mix and treacle all over the beef, Put it into a plastic bag or clean container and chill it in the fridge for 5 days.
Prick the cucumbers all over with a fork and cut in half lengthways. Lay them in a single layer in a non-reactive container, sprinkle with the salt and leave for a few hours.
