Use the best fish you can, but it doesn’t have to be organic, although wild would be the preference. If you are using Farmed then Glenarm or var are different, not so fatty or Rich
Prepare the salmon by cutting 6 fillets from the centre of the side, approximately 180-200gms each, save the trim for the pastilla.
Remove the skin from the remaining salmon and cut the fish into 1cm dice. Blitz all of the remaining pastilla ingredients (except for the pastry and butter) and mix into the diced salmon. Lay the br
