Use the best feta possible, preferably barrel-aged. We use blood oranges, and make this dish when they are around. Any other time of year just use normal oranges, or it would be nice with pink Grapefruit

Ingredients

  • 1 small octopus

Method

To cook the octopus

Remove the tentacles and discard the body. Pressure cook the tentacles at full pressure with 150ml of water for 15 minutes. Leave to cool. To cook without a pressure cooker, cover the tentacles with water, bring to a boil and simmer for 45 minutes to an hour, or until tender. Remove from the pan and leave to cool.
