You could also do these with good cheddar or a blue cheese. You don’t have to be a slave to the cheese

Ingredients

  • 150 g plain flour
  • 75 g freshly grated parmesan
  • a pinch

Method

To make the shortbread

Put all the dry ingredients in a food processor and whiz to mix everything together. Add the butter and pulse to form a crumb. With the machine running, add egg yolk until it all comes together into a sticky dough. Using cling film, form into a large roll and put in the fridge to rest for about half an hour or until you need it.

Cut into neat discs about
