You could also do these with good cheddar or a blue cheese. You don’t have to be a slave to the cheese

Ingredients

  • 150 g plain flour
  • 75 g freshly grated parmesan
  • a pinch of cayenne pepper
  • 100 g butter
  • 1 large free range egg yolk

    Method

    To make the shortbread

    Put all the dry ingredients in a food processor and whiz to mix everything together. Add the butter and pulse to form a crumb. With the machine running, add egg yolk until it all comes together into a sticky dough. Using cling film, form into a large roll and put in the fridge to rest for about half an hour or until you need it.

    Cut into neat discs about 5mm thick, arrange on a baking tray and bake at 180°C for 12 minutes. Cool the biscuits on a wire rack then store in an airtight container.
