You could make bigger versions of the digestives and just dip them in your tea! or roll it out and line a tart case or make a cheesecake base
Put all the dry ingredients into a food processor and whiz to mix everything together. Pulse in the butter to make a crumb then add milk until the dough comes together. Wrap in cling film and leave to rest in the fridge for half an hour or until required. Remove from fridge and leave until just soft enough to roll.
