Ingredients: 25 g golden caster sugar; 1 vanilla pod; 350 g whole milk; 150 g whipping cream; 100 g crème fraîche; 400 ml buttermilk; 1 leaf gelatine, soaked in cold water to bloom; 150 g golden caster sugar; 3 g stabiliser - Louis François Stab 2000; 50 g whipping cream; 0.6 g iota carrageenan; 50 g raw honey; 140 g whole milk; 20 g milk powder; 85 g whole milk; a few spoonfuls of dulce de leche; 50 g white chocolate, melted; juice of ½ lemon; 25 g butter, melted; 15 g golden caster sugar; pinch of salt; 40 g milk powder; 5 g cornflour; 25 g plain flour

I was watching telly on a saturday morning, Eating a bowl of Honey nut clusters, and thinking about the chewy bits, the crunch and the milk. I wanted to do a dish based on that. After a fair bit of work and ideas we came up with this

Buttermilk ice cream

150 g golden caster sugar
3 g stabiliser - Louis François Stab 2000

Method

To make the buttermilk ice cream

Mix the sugar and stabiliser together then add cream and heat until dissolved. Add the crème fraîche, buttermilk, salt and lemon then whiz with a hand blender. Leave overnight in the fridge, blitz again before churning in your ice cream machine.
