To make the filling, heat the oil in a wok or deep skillet. Add the onion and stir-fry for 10 minutes. Add the garlic and eggs, and stir-fry for 5 minutes. Add the chili, salt, pepper, cumin, coriander, rice and cilantro, and stir-fry for 1 minute. Remove from heat Adjust seasoning to taste and allow to cool.
