This recipe has few ingredients and is very easy to make, but it takes quite a bit of time. I make this paste when my CSA delivers over 5 pounds (2¼ kg) of tomatoes, and I have to extend their use. Use overripe tomatoes (just before they really have to be thrown out) to get the best results. Note that you will need several sterilized jars.
