This spice blend is a generic name for a Middle eastern mixture of herbs. Za’atar is popular in Arab cuisine and throughout the Middle east. It can even be used in lieu of salt for flavoring salads and yogurt dips.

  1. Grind the sesame seeds in a food processor or with mortar and pestle. Add the sumac, thyme, marjoram, oregano, and salt, and mix well.
  2. Store the za’atar in a cool, dark place in a sealable plastic bag or in an airtight container. When stored properly, za’atar will keep for 3 to 6 months.
