The name comes from the root of the Arabic for “to grind,” as in grinding to make a thick paste from sesame seeds. It originated as a by-product of sesame oil production, but became a delicacy in its own right. When stored, tahini sauce will separate. Just stir before using to bring it back to the proper emulsion. It will keep in the fridge from 7 to 10 days in a sealed container.
