Duck sauce is a sweet and sour citrus-flavored sauce consisting of a combination of plums, peaches, and apricots combined with sugar, vinegar, ginger, and chilies. It has a somewhat gelatinous texture and a gently spicy undertone. It’s commonly used as a dipping sauce for appetizers and as a base for marinades.

  • 5 cups (1 kg) coarsely chopped pitted apricots, peaches, and plums

Method

  1. Combine the fruit, water, apple juice, soy sauce, apricot preserves, brown sugar, garlic powder, and red pepper flakes in a large pot set over medium heat. Reduce the heat and simmer for 40 minutes. Remove from the heat and allow it to cool.
  2. Once it has cooled sufficiently, blend the mixture with an immersion blender until it is completely smooth. Cover and ref
