Here’s a persian beet salad that is flavored with a bit of garlic and lemon juice, along with plenty of fresh mint. The yogurt’s tartness contrasts wonderfully with the sweetness of the beets. To avoid staining your hands and your kitchen with the beets, wrap the beets in aluminum foil and roast in the oven.
