This sweet, earthy, and delightfully crunchy salad is a powerhouse of flavor and nutrients. The lime awakens your palate to the gentle undertone of the daikon radish, which carries you away to the far east. And you can quickly prepare much of it in the food processor.

Ingredients

Salad

  • 1 beet, trimmed and sliced into thin matchsticks
  • 1 large carrot, sliced into thin matchsticks
  • 1 daikon radish

Method

  1. Combine the beets, carrots, and daikon radish with the green onions in a medium-size bowl. Season with salt and pepper.
  2. Whisk together the lime juice, oil, mustard, and agave nectar in a small bowl and pour over the salad. Toss and adjust the seasoning as necessary. Toss again with the coriander leaves and serve.
